05 - 1 fl oz sugar syrup
06 - 3.4 fl oz chilled sparkling water or club soda

# Directions:

01 - Halve the passionfruits and scoop the pulp into a cocktail shaker.
02 - Add the lime juice, mint leaves, white rum, and sugar syrup to the shaker.
03 - Gently muddle the mint leaves to release their aromatic oils, being careful not to tear them into small pieces.
04 - Add a generous handful of ice and shake vigorously for 15 seconds until well chilled.
05 - Strain the mixture evenly into two tall glasses filled with fresh ice.
06 - Top each glass with sparkling water or club soda.
