07 - 1 tsp Dijon mustard
08 - Freshly ground black pepper, to taste

# Directions:

01 - Combine mayonnaise, Dijon mustard, and freshly ground black pepper in a small bowl; mix until smooth.
02 - Place tortillas flat on a clean surface, ready for assembly.
03 - Evenly spread a thin layer of the prepared mustard-mayo mixture over each tortilla, leaving a 1/2-inch border around the edges.
04 - Distribute sliced turkey breast evenly over the spread on each tortilla.
05 - Place provolone cheese slices uniformly over the turkey layer.
06 - Scatter baby spinach leaves and thin red bell pepper strips evenly over the cheese.
07 - Tightly roll up each tortilla from one end to form a compact log.
08 - Trim the ends of each rolled tortilla and cut each log into 4 equal pinwheels using a sharp knife.
09 - Serve pinwheels immediately or chill for up to 2 hours before serving to ease slicing.
